Our cheese dairy in the Var area
Our organic fresh, mature and wrapped organic goat cheeses are made with milk from our adorable herd of goats.
Pinsou is the Château star. An ambassador of the Alpine Chamoisée breed, he is an ode to la dolce vita at Château Saint-Roux!
Raised in unique conditions, with an exercise park measuring over 8,000 m², our goats also enjoy plenty of relaxation and pampering. And as goats love to climb, our herd has its own goat tower, unique in France (there are only 4 in the world!).

The Château Saint Roux cheese dairy is a genuine artisan treasure and haven of delicious flavours. The creamy and subtle taste of Château Saint Roux’s Provence goat cheese is an ode to our stunning natural environment. We produce a varied range of goat cheeses, each with their own unique characteristics and flavours. The cheese dairy offers fresh cheeses (with herbs, plain, spices or peppers) as well as a range of “tomme” cheeses – a speciality appreciated by lovers of firmer textures and pronounced flavours.
True craftsmen of Château Saint Roux, our expert cheesemakers take meticulous care at every stage of production, from collecting the milk to maturing the cheese. The milk is delicately milked, then curdled in large vats, perpetuating an age-old tradition that has been passed down from
from generation to generation.
