- Amuse-bouche Royal of scallop coral & smoked trout roe.
- Input A small cabbage stuffed with foie gras.
- Fish Larded monkfish roast, parsnip & celery mousseline, balsamic vinegar jus.
- Meat Suprême de pintade truffé, pommes pont-neuf and vin de paille sauce.
- Dessert Light Madagascar vanilla mousse, flowing heart of praline and caramel with fleur de sel, crispy biscuit.
