On the edge of the Plaine des Maures, the Château Saint-Roux terroir is revealed through 40 hectares of organically-grown vines.

Château Saint-Roux offers a fine range of grape varieties emblematic of Provence: Côtes-de-Provence (Grenache, Syrah, Cinsault, Rolle, Mourvèdre) but also Viognier (Côtes du Rhône), Marselan (a cross between Cabernet Sauvignon and Grenache) Colombard, Merlot, Nielluccio (Corsica), which are more rustic and atypical.

Organic viticulture eliminates exposure to the toxic products sometimes used in traditional viticulture. As a result, soil life (earthworms, small insects, etc.) is much improved, enabling the vines to become better established in their terroir.

Harvesting is done by hand, divided between the cutters and the porters. The cutter picks the bunches and places them in the harvest bin.
The operation of grape harvesting machines is based on the phenomenon of vibration. It is the vibrations transmitted by the machine to the vine trellis and the vines that allow the grapes to separate. The seeds separate from the bunches and fall onto a belt that carries them into the barrel.

Set in crystalline, limestone soil, its soils give life to wines with complex aromas, cradled by the Mediterranean climate of Provence. Rich in iron and bauxite, essential nutrients, the estate's grapes create deep, distinctive wines, in perfect symbiosis with the olive trees that grow on the plots.
