A tribute to the Provençal terroir

In the heart of the Var, the vineyard extends over 40 hectares of organically-farmed vines and produces five organic wines in three colours.

  • Château Saint-Roux Rosé reveals a complexity and structure that are rare in AOP Côtes de Provence. It is a reflection of the Saint-Roux terroir.
  • Friponne reflects the generosity and authenticity of our organic wine estate. This rosé wine from the Pays des Maures (IGP Maures) expresses freshness and suppleness.
  • Blended by us, the Le Pigeonnier cuvée reflects the Saint-Roux philosophy. It is available in rosé, red and white wines.

A RICH SOIL

The colour of the soil, with its orange and ruddy highlights, is the origin of the name Saint Roux. Rich in iron and bauxite, these essential nutrients act as a catalyst to develop vines rich in aromas. At the heart of a windy corridor, the vines naturally protect themselves from disease and are therefore already predisposed to tolerate Organic Farming.

VINIFICATION & NATURAL YEASTS

In addition to the vines, our wines are made using natural, local yeasts. They intensify the complexity of the aromas and give our wines a unique signature. In this way, we strive to reflect as faithfully as possible the expression of our exceptional terroir. This organic approach, which is exceptional in the Côtes de Provence PDO, is the hallmark of our wines.

INNOVATION & BIODIVERSITY

In collaboration with the Var Chamber of Agriculture, this organic vineyard in the Var has an experimental plot for analysing the behaviour of different grape varieties, with the aim of adapting to global warming. The plot includes grape varieties that are particularly resistant to drought and southern varieties: Mourvèdre gris and blanc, Touriga nacional, Calabrese and Mavrud.

THE TASTING CELLAR & CAFÉ BOUTIQUE

The ideal place to discover our organic wines on the terrace or by the fire. The boutique is also a café where you can discover organic products from the estate and local producers. Create your own salad on the spot with our vegetable baskets, over a coffee or a snack, this is the place to be.

The Côtes de Provence appellation covers more than 20,000 hectares in three départements: Var, Bouches-du-Rhône and Alpes-Maritimes, which include 84 communes.
For organic wines, the doses are more than acceptable and the products are more natural. Cultivation is more natural. Winegrowers use organic fertilisers such as liquid manure, compost and homeopathic remedies. The grapes absorb nutrients from the soil, which improves the quality of the product.
Wines with the organic label have a number of attributes, including respect for the environment and consumer health by not using chemical pesticides. Positive effect on the environment: no chemical pesticides
There are many preservatives, but these are naturally present in grapes. A powerful antioxidant that allows wine to stand the test of time. As such, it is used in wine to prevent deterioration by unwanted bacteria.
This makes the wine more sensitive to storage and seasonal temperature variations. Wines with no added sulphur require not only absolutely perfect vinification conditions (a real tightrope walker: one mistake is fatal), but also optimal storage and conservation conditions. In particular, it must never exceed 14°C. A condition that most wine merchants and private individuals cannot meet.
To enjoy organic wine, it is essential to use the wine glasses provided. However, we recommend that you serve organic wines in glasses that have been washed briefly with your hands and hot water.
The grapes are nurtured and grown using organic methods, while preserving the surrounding biodiversity. Harvested by hand and vinified without additives. Each stage is carried out directly by two winemakers.
